This record count display change was released on Nov. 19th to ensure that the record count is always visible to provide a clearer user experience across all data tables: 🚀 2024 Week 47 Updates! - NEW | Knack

There is currently no way to remove the record count display natively within the app’s settings. However, this can be done using custom code within the App Settings > API & Code > CSS section in the Builder:

We suggest trying custom code in a test app prior to implementing the code in your active applications.
